Instructions

1. Dice onions and mince garlic. 2. Saute onions in olive oil until translucent, about 5 minutes. 3. Add garlic, cook 1 minute more. 4. Add Roma tomatoes and vegetable stock. Bring to a boil. 5. Reduce heat, simmer 20 minutes. 6. Blend soup until smooth using an immersion blender. 7. Stir in heavy cream and torn fresh basil. 8. Season with salt and pepper. Serve hot.
