Instructions

1. Slice cremini mushrooms. Dice onion and mince garlic. 2. Saute mushrooms in olive oil over high heat until golden. Set aside. 3. Toast arborio rice in butter for 2 minutes. 4. Add onion and garlic, cook until soft. 5. Add white wine, stir until absorbed. 6. Ladle warm vegetable stock one cup at a time, stirring constantly. 7. After 18-20 minutes, fold in mushrooms, parmesan, and cream. 8. Season with salt and pepper. Serve immediately.
