Instructions

1. Preheat oven to 375F. Butter a baking dish. 2. Slice russet potatoes very thinly on a mandoline. 3. Layer potatoes in dish, seasoning each layer with salt and pepper. 4. Pour heavy cream over potatoes until nearly covered. 5. Top with grated gruyere cheese. 6. Cover with foil and bake 45 minutes. 7. Remove foil, bake 15 more minutes until golden and bubbly. 8. Rest 10 minutes before cutting and serving.
